Cheerful Salad

Today, I have a recipe to share.
Invented because this is what was in the pantry.

The family dubbed it Cheerful Salad.
I am open to suggestions if anyone would like to try this salad and come up with a better name.

Cheerful Salad
is perfectly refreshing for a hot summer evening, no cook dinner.
It's simple and very elegant.
There is a refreshing mix of sweetness from the beets and the basil
that balances the bitterness from the other greens
and the walnuts add a nice crunch and texture.
Toss Together
Romaine Lettuce
Fresh Basil leaves chopped
Fresh Watercress chopped, okay to include the stems
Small Beets, cooked chilled and sliced
(Precooked beets can be found in the Trader Joe's produce section.)
Walnuts for a little crunch

Dress with Flaxoil and Lemon Juice to taste.
